ENVS 210 - Introduction to Sustainable Food Systems

Overview of how Illinois residents have responded to food problems through local initiatives. Examines different local food models used in DeKalb County and northern Illinois. Local public gardens will be used to explore soil science, food justice, local food, project management, public health, and environmental issues. Opportunities for several on-site visits to food production operations in the region. One hour of lecture and three hours of laboratory work in local public gardens per week.
